The quality of the raw material is the fundamental element for obtaining excellent products. The soil used for the cultivation of cereals must have the right characteristics of exposure to the sun, altitude and composition of the soil itself. In the case of the cultivation of native ancient grains, yields in terms of production per hectare are very low, so these elements are even more crucial and in some cases indispensable. It is therefore essential to implement all those forgotten habits to get the most out of their land, such as crop rotation and combined cereals / vegetables. Only in this way can you grow high quality cereals without using fertilizers. The ancient grains, which had been abandoned in favor of more productive species, have peaks that reach up to 2 meters in height, so they manage to suffocate weeds without the need to use herbicides. Another important aspect is the conservation of the cereals that we use after harvesting are exposed to the sun for about 3 days and then placed in large bags and stored in an air-conditioned warehouse at constant temperature and humidity. It is clear that a direct relationship is needed between the cereal producer and the mill which then produces flour and semolina. The cereals we use are therefore all coming from our territory and the products that are obtained in addition to presenting excellent organoleptic and nutritional characteristics, respect the environment and the health of the consumer.
